Serves 6
Ingredients
100g Mortimer White Couverture Powder
2 tablespoons of boiling water
200g cream cheese
200ml double cream
100g digestive biscuits
50g melted butter
Method
Crush the digestive biscuits and mix in the melted butter
Press into the bottom of the loaf tin
Put the white couverture powder into a small mixing bowl and stir in the hot water
Microwave on high for 10 seconds then stir until melted
In a large mixing bowl whisk the cream cheese and double cream together, until combined
Add the melted chocolate and whisk until thick
Spoon into the loaf tin and spread out evenly
Cover with the cling film and set in the fridge for at least 4 hours
Turn out and serve with summer berries.
