A delicious, quick and easy to make chocolate cheesecake made using natural cacao powder or 70% chocolate powder.
Ingredients:
100g biscuits
50g butter
200ml double cream
200g cream cheese
75g Mortimer Chocolate Cacao Powder or 100g Mortimer Chocolate 70% Ecuador Chocolate Powder
Method:
- Crush up the biscuits until they are all crumbs
- Melt the butter in the microwave and add this to the crushed biscuits, mix them together and then press this mixture into the bottom of a lined tin
- In a mixing bowl, whisk together the cream cheese and double cream
- Whilst whisking, add the cacao powder and whisk until it forms a smooth mix, or melt the chocolate powder and whisk it in until smooth
- Put the cheesecake mixture on top of the biscuit base and refrigerate for at least 4 hours
- Melt some chocolate powder and drizzle over the cheesecake to finish
